The Champagne section is intentionally narrow: ten products from two houses that represent the character of small and medium-sized Champagnes. No Grandes Marques, but rather artisanal houses with their own style.
Champagne Drappier from the Côte des Bar works largely with Pinot Noir — the dominant grape variety there — and uses vinification methods with reduced to no sulfur. The Carte d'Or as the house entry, Brut Nature for purists, an organic-certified Clarevallis, and the Rosé de Saignée as a rarity show the range. Also available as Magnum.
Le Brun de Neuville is a cooperative from the Côte de Sézanne. We carry the Rosé Champagne "Au bout du Chemin" and the Cuvée AUTOLYSE Noirs & Blancs — both Champagnes with long lees aging and complex character.
Serve at 6–8 °C, in a tulip glass or a slender white wine glass — not in the classic flute.
