In Calzada de Calatrava, in the heart of Castilla-La Mancha, the Ciudad Imedio family runs Finca la Rosala – a small manufactory whose hand-roasted gourmet nuts are now exported to more than fifteen countries. Pistachios grow on their own finca, and they are roasted in a wood-fired oven, just as master roaster Angelito taught the family in 2013.
A pink finca in La Mancha
The name comes from the pink-red earth of the old family finca. When Pedro Ciudad Imedio took over the land, he was looking for a crop that suited the hot, dry climate of the Meseta – and found it in the pistachio. Since 2013, Kerman pistachios have been grown here according to biodynamic principles. The planting year lives on in the brand name.
Roasted in a wood-fired oven, as Angelito taught
In the home village lived Angelito, a master roaster whose family had been refining nuts in a wood-fired oven since the 19th century. From him, Pedro's father learned the traditional craft: slowly, in small batches, by hand on baking sheets at under 145 °C. This preserves the aroma and bite – a quality that cannot be achieved industrially.
Natural ingredients, surprising flavors
Finca la Rosala uses only natural ingredients: Spanish Marcona and Valencia almonds, walnuts from the Iberian Peninsula, hand-picked cashews and pecans. They are refined with sea salt, fresh herbs, extra virgin olive oil, or the famous smoked paprika Pimentón de La Vera. Without artificial flavors, without colorings, without gluten and lactose – much of it is vegan.
